The steps in clearing the table

Ask if you could clear the table
Put an empty tray on the tray-stand
Remove the cutlery to the left of his dinner plate
Pick up the plate
Grip the cutlery firmly under your left thumb
Pick up the side plate and unused cutlery
Take all item to the tray on the tray stand
Clear the empty wine glasses from the place setting
Leave the water glasses and any filled wine glasses on
the table

The steps in clearing the table
10. Scrap food left on the plates onto one plate before
stacking up the dishes on the tray
11. When the tray is full, take it to the clearing station
12. Bring an empty tray back to continue with the clearing
13. Remove bread basket, butter dish, salt and pepper
shaer
14. Give the dessert menu to the guests
15. Leave the table so that guests can read the menu

Remarks
• Scrap off food from plates as quietly as possible
• Stack dishes with the larget and heaviest on the bottom
• Some restaurant have a separate menu for dessert. In
others, desserts are included in the a la carte menu

Important phrases
• Clear the table = remove all the dirty and used dishes
and cutlery from the table
• Clearing station = dirty dishe are taken from tables and
left in this area of the restaurant. From her, stewards
take the dishes away to be washed
• ..not directly within the guests’ view..= not be in a
position where guests can see clearly what the waiter is
doing
