hand-harvested. Cold maceration took place over ten days. This was followed
by fermentation with selected yeasts in stainless steel tanks at 27ºC. 40% of
this wine was aged or six months in French and American oak barrels.
Winemaker’s comments: This Syrah is intense, bright ruby in colour. Spicy
notes on the bouquet are complemented by fresh red fruit aromas and subtle
toasted notes reminiscent of chocolate. This is a juicy, well-structured wine
with soft tannins and otes of cherries and strawberries, as well as hints of
vanilla from the ageing process. The finish is fresh and persistent.
Food pairings: This wine combines well with red meat, duck, mature cheese
and red fruit tart. Best served at between 16°C and 18°C.
Cellaring Recommendations: Three to four years.
