Ingredients
1 fillet salmon, skinned
2x15ml spoon plain flour
Black pepper
½ lemon, zested
8 x 15ml spoon wholemeal breadcrumbs
2x15ml spoon, low fat plain yogurt

Non-stick baking tray, chopping board, knife, bowl, zester, measuring spoons.

Method
1. Preheat oven to 200C or gas mark 6.
2. Zest the lemon.

3. Mix the breadcrumbs with the lemon zest and some black pepper.

4. Cut the salmon fillet into ‘fingers’.

5. Dust the ‘fingers’ in the flour.

6. Dip the ‘fingers’ into the yogurt.

7. Roll the ‘fingers’ in the breadcrumbs.
