COCKTAILS
FARFALLA - We balance our Chamomile infused Bombay Sapphire Gin with
Strega and lemon juice, then use Byron Bay Organic Honey to round off the
delicate flavours.

UN CAFFE? - Our take on the Espresso Martini… Tuscan vanilla liqueur,
cold-dripped through ground Niccolo coffee married with Bacardi Oakheart.
We then add equal messures of Licor 43, Ameretto and DeKuyper Butterscotch
Schnapps and finish with black walnut and chocolate bitters to add complexity
to this modern classic.

BREAKFAST IN BOLOGNA - The only acceptable time to have bourbon
For breakfast is when it’s accompanied by a classic Italian Amaro. In this cocktail
we combine Makers Mark Bourbon with Amaro Montenegro and soften the blow
with a healthy spoon of plum jam, a dash of plum bitters and add a measure of
lemon juice to tie the whole thing together.

Elderflower and Solerno Blood Orange Liqueurs. Combined with muddled cucumber,
freshly pressed apple juice, ginger and lime - Four of your five-a-day in one glass. 18
DOLCE AMARO - So many bitter components but so beautifully balanced with
fruity flavour… integrating three Italian stalwarts in Averna, Montenegro and Aperol.
Finished with fresh lemon juice to perfectly round off this hidden treasure.

THE FOX - The perfect balance of sweet and sour - just like the orange sherbet
you had as a kid. First we muddle fresh orange, strawberries and vanilla, then we
add 42 Below Vodka, Muscat Grape and Orange Blossom Liqueur and Amaretto. 19
MAFIOSO - Fresh flavours of grape and lemon are backed by Limoncello and
depth of Poli Po Grappa from Veneto. A touch of Bacardi Superior and Peychaud
bitters compliment these flavours for one seriously good cocktail.

LIL’ FRANKIE - Dark and rich berries lead the front for this little guy. Flavours
of Luxardo Maraschino and Sloe gin are rounded off by the sweet and herbal
bitterness of Averna.

BARREL-AGED NEGRONI - This Italian Classic needs no introduction,
however we’ve developed it even further by allowing its basic components –
Star of Bombay Gin, Campari and Sweet Vermouth to age in our custom
American Oak barrel for just the right about of time before bottling.
