“Milk, after pasteurization,
should contain no more than
20,000 bacteria per milliliter
of milk and no more than
10 coliform bacteria per milliliter.”
Milk has something for everybody.
There is one thing dairy products
have more than any other food I
can think of:
contamination.

There is a 17-amino acid peptide chain commonly found
in the insulin-producing beta cells of the pancreas.
There is a 17-amino acid peptide chain commonly found
in cow’s milk.
Both are nearly identical.
Children with IDDM had elevated serum concentrations
of antibodies against bovine whey protein.

Diabetes does not occur
in diabetes-prone
rodents reared on a diet
free of cow’s milk for the
first two or three months
of life, indicating that
cow’s milk protein can
trigger the disease.

Cow’s Milk and Cataracts
Adults who consume
large quantities of
milk, who have high
lactase activity,...suffer repeated small
galactose challenges, accumulation of
galactitol in the lens, and a greater
likelihood of developing senile cataracts.

he has ingested milk

Low Absorption of Calcium
From Milk
• Only 25% of dairy
calcium is absorbed by
the body.
• Human milk with less
than half the calcium is
better absorbed.
• Kale, greens, or sesame
seeds are better sources
for the same reason
Cancer Virus
Highest cancer rates are in
dairy farmers & poultry farmers
who market eggs.
• Milk
1975 - Seven in ten cartons had cancer virus
More than 30 human diseases traced to milk
• Eggs
1975 - Seven in ten eggs had cancer virus
1985 - nearly 100% had cancer virus
Cases of Mad Cow Disease
• Over 168,000 head of cattle were
infected between 1986 and 1997
• About 120 new
cases per week
are being found
in Britain as of
1997

Destructive Power of Prions
• Prions are infectious substances found in
animal products used for animal feed
• They cause several types of transmissible
spongiform encephalopathy diseases in
humans and animals
• These disease are fatal, with no known cure
Characteristics of Prions
Unlike bacteria or viruses
Consist of protein only
Attack only the CNS
Immune system does not attack them
Infectious power not destroyed by sterilizing
fluids, freezing, drying, or high temperatures of
sterilization
Shape is slightly different from normal protein
Produce chain reaction causing normal proteins to
change shape
Prion-Induced Diseases
Found In Humans
• Creutzfeldt-Jakob disease - found in Europe
and U.S.
• Gerstmann-Straussler syndrome
• Keru - found in New Guinea

Parallels between prion-related
diseases and Alzheimer’s

• Symptoms are similar
• They are always fatal
• No blood test can detect them
• Usually detected on autopsy

Dangerous E. Coli Bacteria Diseases
• Several E. Coli types
• Cause severe bloody diarrhea
• Cause Hemolytic Uremic Syndrome in
children (kidney failure and destruction of
red blood cells) which can be fatal
• The bacteria can be found in beef, milk,
(raw and pasteurized), sausage, apple cider,
and venison
Listeria Bacteria in
Hot Dogs and Chicken
20% of Listeria
cases are linked to
uncooked hot dogs
and undercooked
chicken
Salmonella Diseases
• Salmonella causes two million illnesses annually
• There are many large outbreaks, with up to
200,000 people infected at a time
• Symptoms are diarrhea, pain, and dehydration
• The infection may lead to meningitis, sepsis, and
chronic arthritis
• The bacteria has been found in raw milk,
pasteurized milk, eggs, chocolate, ice cream, beef
sausage, salami, and chicken

 Fish from mildly polluted water concentrate
toxins up to more that 1,000,000 times more than
detected in water
 Toxins in their fatty tissues include pesticides,
chlorinated hydrocarbons, mercury, and dioxin
Fish can also be contaminated with PCB’s,
various heavy metals, petroleum hydrocarbons,
halogenated organic compounds, and lead

Problems with Fish and Fish Oil
• Can worsen blood sugar levels in diabetics
• Large amounts can dangerously prolong blood
clotting time
• Fish oil is expensive
• Can lead to an increase in body weight
• Sea food is a large reservoir for infectious diseases
• Toxins acquired from contaminated
waters concentrate in the fatty
tissues of fish
If cooks pretended that in handling
raw meat, they were handling a
lump of raw sewage in a food
environment, and took all the
necessary precautions, then that
would be just about adequate.
Bon appetite!
Four out of
every five
chickens sold in
a supermarket
are infected
with salmonella.
• Therapeutic use - Fix the one
sick cow. (Human toxic effect.)
• Prophylactic use - Protect the
whole herd.
• Growth promotion - Part of the
feed. (Human hypersensitivity effect.)
Resistance
&
Cross-resistance
Leads to a reservoir of resistance
There is a large reservoir of E. Coli in calves
and pigs which are very resistant and that
resistance can be “donated” to more
dangerous organisms such as salmonellae.
• About 25% of human salmonella
infections are now resistant to
drug therapy.
• Half the antibiotics now
produced are fed to food animals
(disease prevention and growth
promotion.)
Chickens are now being fed their own
excrement to about 50% of their total
intake of food, its very economical. But it
means that contaminants, such as drugs,
hormones, pesticides and antibiotics are
getting more and more concentrated each
time they go through.
• Cases of allergy, including...
– Asthma (3X more common in youth
today than in their parent’s day.)
– Eczema (6X more common today.)
• Have increased alarmingly over
the past few decades
• Use of antibiotics in food animals
has also increased greatly.

Fat Remains Longer in the Stomach
• It coats the particles of carbohydrates
and protein.
• Salivary and gastric juices cannot digest
fats.
• These particles of food pass out of the
stomach undigested.
• Fermentation, sour stomach, heartburn,
gas, and indigestion occur
Fat Head...
• Large amounts of saturated fats can cause a sharp
drop in the amount of oxygen that reaches the brain
cells.
• Good though requires a good amount of oxygen in
the brain.
• In one study using dairy cream, the oxygen in the
brain dropped 30%.
• Restricted blood flow to the brain impairs clear
thinking, causes headaches, and leads to senility.
• A fat-rich meal can cause the oxygen level in the
brain to drop to 68% and require three days to return
to 95% of normal.
...or Air Head?
• Excess fat causes the red blood cells to stick
together, reducing their oxygen carrying
capacity.
• Only a 35% reduction of oxygen is
necessary to produce malignant cells from
normal cells.
• Nine to twelve hours are required for this
clumping to begin reversing, and 72 hours
for circulation to return to normal.
