The unusual name of the wine region dates back to a 12th-century tale of a German bishop traveling to the
Vatican for a meeting with the Pope. The bishop sent a prelate ahead of him to survey the villages along
the route for the best wines. At a Montefiascone inn, the prelate was reportedly so impressed with the local
wine that he wrote Est! Est!! Est!!! (Latin for “It is”) on the door so that the bishop would not fail to stop by.

Is a black grape grown in Campania region of Italy. The vine originated in Greece and was brought to the
south of Italy by Greek settlers. In Campania the area in and around the village of Taurasi Aglianico’s only
DOCG wine is produced, also called Taurasi. Wines produced from Aglianico tend to be full bodied with
firm tannins and high acidity, making this a wine that has aging potential.

Nero d’Avola is Sicily ’smost popular red grape. Until the 1980’s, commercial use of Nero d’Avola was
dedicated almost exclusively to fortifyng weaker reds in France and Northern Italy. New viticulture
techniques and night harvesting have been used by a few vintners to retain flavor without producing an
overpowering wine. The result is often compared to Syrah, another popular red.

BAROLO
Wine of Kings and King of Wines. It ’s made from only the very best Nebbiolo grapes, grown near the town of
Alba in Piedmont, in eleven small townships. The fermentation of the Barolo used to be very long(at least
3 weeks), now the “modernists”productor cut fermentation times to 10 days and put the wine in French
barriques; the results, said “traditionalists”,was that the wines weren’t recognizable as Barolo and tasted
more of new oak than of wine.
The controversies between traditionalists and modernists have been called the “Barolo wars”

Made from dried Corvina Veronese, Rondinella and Molinara grapes, by using the thousand-year-old
technique of “APPASSIMENTO” (drying of the grapes): after being harvested, the grapes are left to dry for 3
to 4 months; end of January, beginning of February grapes are press and maceration is very long, very slow
also the fermentation at low temperature, 30 to 50 days.
