Effect of Aerogel on the
Wettability of Food Powder

Wettability Test Objective
Aerogels will be used in a test to increase
the wettability of food powder products
such as Slim Fast in order to improve
processing cost.
Current methods for increasing wettablility in
Slim Fast include adding soy lecithin, corn
starch and sugar gum.
Procedure for Wettability Test
Floatation Cell + Mechanical Mixer:
Separated the non-wettable fraction from the
wettable fraction of the Slim Fast powder in
water.
Test Groups:
Control Test Run: NO Aerogel, Slim Fast Powder + Tap
Water
Aerogel Test Run: Contained 1% weight Aerogel powder to
Slim Fast powder + Tap Water
Preliminary Results for Wettability Test
The Slim fast containing 1% Aerogel powder
improved wettability 60% compared to Slim
fast without Aerogel.
