Humous
 1 16 oz can of chickpeas or garbanzo
beans
 1/4 cup liquid from can of chickpeas
 3-5 tablespoons lemon juice
(depending on taste)
 1 1/2 tablespoons tahini
 2 cloves garlic, crushed
 1/2 teaspoon salt
 2 tablespoons olive oil
 Drain chickpeas and set aside liquid
from can. Combine remaining
ingredients in blender or food
processor. Add 1/4 cup of liquid
from chickpeas. Blend for 3-5
minutes on low until thoroughly
mixed and smooth.
Place in serving bowl, and create a
shallow well in the centre of the
humus.
Add a small amount (1-2
tablespoons) of olive oil in the well.
Garnish with parsley (optional).
Serve immediately with fresh, warm
or toasted pitta bread, or cover and
refrigerate.

4 tomatoes
½ red onion
1 chilli
Basil leaves
Juice of one lime
 Skin the tomatoes using







boiling water or the gas flame
Cut tomato flesh into small
pieces. Place in bowl
Peel and finely chop red
onion
Wash, and slice chilli. Adding
seeds will make it more hot.
Wash hands after preparing
Half lime and add juice to
salsa
Mix
Add a few basil leaves for
appearance and taste

 2 avocados
 1. Extract both avacados
 1 small onion
from their skins into a
bowl.
 Squeeze in lemon.
 Add chopped tomato and
onion.
 Sprinkle with garlic
granules and salt to taste.
Mix well, until slightly
lumpy. Refrigerate to chill
if desired.

 Mix cream cheese and

soured cream in a bowl
until well mixed

 Mix in garlic and chives
 2 TBSP fresh chives

 Made from cucumber
and yoghurt
 Cools down spicy foods
 Contains one of 5 a day
 Suitable for vegetarians

the yoghurt.







150g greek yoghurt
½ cucumber
1 clove garlic
1 TBSP lemon juice
Olive oil
Sprinkle with paprika
 The best result is achieved
by peeling and de-seeding
the cucumber before
grating.
 Hang the grated cucumber
in muslin cloth or a tea
towel in order to squeeze
out all the excess liquid.
 Combine the yoghurt,
cucumber, lemon juice and
garlic.
 Add a dash of olive oil and
sprinkle with paprika.
Thousand Island-American
 100g Mayonnaise
 1 TBSP Tomato Ketchup
 1 TBSP Worcester sauce
 1Tsp chilli sauce
 Place all ingredients in a bowl
and mix together.
