What is the Glycemic Index?

     The final form of ALL food delivered to the cells for energy is: Glucose The glycemic index (G.I.) is a rating (1-100) of how rapidly a food will raise blood sugar (Dr. Jenkins) Why important – Speed Kills:  Rapid increases in blood sugar cause an insulin response  Abuse of insulin causes damage over time Glucose is the standard; it rapidly raises your blood sugar, and has a high index score of 100. All foods can be rated relative to glucose.

What’s The Problem?

    Oxidative Stress – the Glycemic cycle Caused by what we eat – High glycemic foods kick off the cycle No protection – antioxidants (The glycemic cycle is not the only cause of oxidative stress – sun, pollutants, etc just add to the problem)
