DEMONSTRATION
What Does the Blast Chiller /
Freezer do?

A chill cycle significantly reduces the time the food remains in the critical temperature
band (from 10°C to 65°C) where there is high probability of bacteria proliferation.

A freeze cycle, on the other hand, reduces the formation of macrocrystals of ice inside
the frozen product when forming, affecting the organoleptic properties of the food.


The unit operates in accordance with the Department of Health Guidelines as follows:-

Final product temperature 3°C
Duration 90 mins
Freeze cycle
Initial product temperature 90°C
Final product temperature -18/20°C
Duration 240 mins

Programmes Available
Each Blast Chiller/ Freezer has the following cycles to choose from:
Blast Chill
- Soft Chill:
For items with delicate composition and high water content
e.g Patisserie ,gateaux ,rice dishes, pasta and vegetables
- Hard Chill
For general purpose chilling and items with high fat content
e.g Meat joints, stews, pies and sous-vide items.

Blast Freeze
-Soft Freeze
For items as above
-Hard Freeze
For item as above
Programmes
 Timed Chill - Probe not used
 Probe Chill - With the probe in the food product
 Probe Chill – Recommended
Place the probe into the food item for the duration
of the cycle. At the end of the cycle a buzzer will
sound and the unit will go into storage mode
To Change the Language
 If you wish to change the language, please
follow the following instructions:
 Menu
 Scroll to “impostazioni” (icon = chef)
 Push OK and insert the password 9998 (twice down arrow) and confirm
with OK
 Scroll to “cambia lingua/PW1” (icon = flag)
 Push OK
 Push OK again (cursor blinks on “lingua”)
 Scroll to “English” or other language and confirm with OK

 Select Chill Mode
-Soft Chill
-Hard Chill

 Ensure probe is in product
 Ensure all product is spread evenly on each tray
 Do not cover product with lid
 Press select button and hold for 3 seconds to start cycle
Cycle Display
 Once the cycle has started the fans will activate
 The unit will then go into a defrost mode and the
defrost symbol shown
 Every cycle starts with a short defrost cycle
 The cell pre-chill will then commence
 When complete the chill or freeze cycle will start
 The LCD will indicate the following information
- Product temperature
- Cell temperature
- Time elapsed
End of Cycle
 At the end of each cycle the unit will
automatically go into storage mode and
storage icon will appear on the LCD
 The unit can be switched off by pressing the
select button when “Off” is shown in the
lower right hand side display
 The next cycle can then be started or the
repeat cycle button pressed to repeat last
cycle
