I principali difetti
avvinato/agro/inacetito, riscaldo/morchia e muffa.
difetti quali avvinato, rancido, riscaldo/morchia, olive gelate, muffa.
3.2 Text in English (min 3000 caratteri / characters):
State of art
In 1991, the UE regulation n° 2568 concerning oils obtained by olive fruits introduced the sensory
evaluation as mandatory (called “panel test”) to establish if an oil is classified within the category extra
virgin, virgin or “lampante”.
Extra virgin olive oils are characterized as not affected by any defect and, in the meantime, they must
present three positive characteristic named “fruity”, “bitter” and “pungent”, while defects must be not present
in extra virgin olive oils, they can be accepted, within established levels in virgin olive oil, then, if they
exceed these limits, oil is classified as “lampante” that means it is not suitable for direct human consumption
and must undergo to refining.
Defects had been standardised by International Olive Council (IOC) and these only can be considered for
an official evaluation of oils.
Despite a number of efforts carried out to make panel test as much objective as possible, some doubtful
areas still exist, mainly when borderline oils, laying between closely near categories, depending on light
defects or low differences of their intensity.
Lack of reference standards is considered a weak key role for sensory assessors training, that is a critical
aspect that must face the increasing number of panel test groups worldwide distributed, outside of Europe,
too.
Bearing in mind that a relevant aspect of sensory evaluation is carried out by sense of smell, a number of
studies had been carried out to evaluate which compounds could be responsible of the presence of sensory
defects.
An important problem when volatile compounds are extracted from oil is to avoid the formation of artifacts,
caused by the use of solvents, because in the step of solvent evaporation, some volatile compounds can be
lost.
In the early ‘90st, Solid Phase Micro Extraction, a solvent free sampling/concentration techniques was
developed.
Sampling can be carried out both by dipping and by head space sampling.
From 2003, a number of researchers applied this technique to the evaluation of volatile compounds of olive
oils, however, despite the huge amount of data, a systematic approach was never applied to this kind of
studies.
In the recent years, the research group of Food Chemistry of the Dept of Food Science (nowadays Food
Chemistry and Technology Section of the Dept. of Agro Food, Environmental and Animal Sciences) of
University of Udine developed a research line, within the frame of a PhD dissertation, too, that admitted to
identify and quantify some selected chemical markers responsible both of “fruity”, “green” and of some
defects like winey/vinegary, rancid, fusty/muddy sediments, frostbitten olives, mould.
In the case of winey/vinegary suitable markers had been already identified, in the other cases the GC trace
is very complicated, and further studies are mandatory.
.
Objectives of the activities to be developed within the frame of the proposed grant
Activities of the proposed grant will be developed within the frame of the Horizon 2020 project named
“Oleum” (Grant n°635690) and related objectives are:
a) Study of relationship between volatile compounds and defects perceived by sensory assessors group
(panel test) on the basis of the following items:
a.1) Evaluation of the degradation process usually named “rancid” but that depends on an huge
number of chemical reactions that can lead to different profiles, probably prone to change as time
increases;
a.2.) The same approach should be developed in the case of defect known as fusty/muddy sediments,
that are really two defects, grouped for the sensory evaluation purpose, but that indeed can develop at
different step of the production chain.
b) Preparation of virgin and refined olive oil samples, spiked with known and increasing concentration of
compounds previously identified as suitable markers of selected defects.
These samples will undergo to the judgement of panel groups recognised by the IOC or by the Iytalian
Ministry of Agriculture, with the aim to validate the agreement between the chemical profile and the sensory
assessment. Any quantitative evaluation should be considered both as concentration and as AOV.
Results
Expected results wil be:
- Possibility to make panel test “quantitative”, in co operation with othre research partners of the Oleum
project;
- Possibility to obtain reference standards suitable for the first and the long life training of the sensory
evaluation panels, in thios case, too, in co operation wth otjer partners of the Oleum project.
