Amarone Classico D.O.C.
della Valpolicella “Paverno”
ORIGIN: vineyards owned by the Vaona family, located on the hills of the
historic region of production, situate ad una altitudine tra 200-250.
SOIL: alluvial soil on calcareous basalts, favored by an excellent exposure.
Some vineyards are characterized by terracing defined by renowned dry
walls (called “marogne”)
GRAPE VARIETY: Corvina 40%, Corvinone 30%, Rondinella 25%, Molinara
5%, prodotte da viti con età media di 25 anni
HARVEST: upon maturation the grapes are selected and placed in small
wooden boxes, where a TRADITIONAL withering of over 3 months follows.
Vinification technique: a slight pressing of the grapes precedes a partial
removal of the stalks. After that a maceration of 10-12 days follows, at a
low temperature (1-2° C), which favors a higher concentration of primary
fragrances. With the progressive increase of temperature a spontaneous
alcoholic fermentation starts, which continues at controlled temperature (1315° C) in conditions of partial anaerobia for over 30-35 days.
REFINEMENT: the Amarone classico doc Vaona wine is refined in mid-size
durmast wood barrels (12.5 hectoliters) for 18 months and an additional
period of 5 months in bottles.
COLOUR: burgundy red
BOUQUET: intense with characteristic scents of cherry complemented by
spicy notes.
TASTING NOTES: elegant tannic structure, well balanced and powerful
wine.
FOOD PAIRINGS: red meat, slow-cooked stews, game, and matured cheese varieties.
