E. coli & Salmonella
• All animals carry E. coli and some
Salmonella in intestines
• Small % of eggs (1 in 20,000) may
contain Salmonella enteritidis (SE)
• Fertile eggs used in project come from
flocks that are routinely tested for any
presence of SE
E. coli & Salmonella
• Most Salmonella infection cases come from
food-borne sources (improper food handling)
• Bottom Line: Teach good hygiene (sanitation
– wash hands) to reduce very small risk of
Salmonella or E. coli infections

Avian Influenza (AI) (Bird Flu)
• Chicks are never born with AI. Virus will not
transmit from hen to chick via egg
• Fertile eggs used in classroom come from
flocks which are closely monitored and
routinely tested
• AI (Bird Flu) (H5N1) found in Asia have never
been found in North America

• Strains of Bird Flu crossing over to humans in
Asia are different form of AI
• People who died were in direct contact with
infected birds
• They lived with birds and contracted disease
by breathing in the virus
