Activities under COE

Created nutritional awareness, processing and value addition of various pearl millet products

The theoretical and practical knowledge about primary and secondary processing equipments including pulvariser, hammer mill, parboiler, blancher, solar tunnel drier and preparation of various value added products of pearl millet were demonstrated to trainees.

Grit from unprocessed and processed Pearl Millet.

Some of the Bakery products, Extruded products, Ready to Eat products and Convenience mixes have been developed.

Literature, technical knowledge, and entrepreneurial development is imparted to trainees .

Baked Products

Acceptability and Nutritional studies

Pearl Millet flour with soya flour in various combinations were standardized for baked products

Pearl Millet products - 40 % pearl millet flour with 20% soya flour scored as good as control for organoleptic characteristics.

Had protein (8.17-15.13 %), fibre 214.34 mg) and iron (0.61- 3.24 %), calcium (4.11-13.50 mg) content good. (77.31-

Protein : 8.71- 12 % Energy : 500- 560 KCal

Cakes

Protein : 10.28- 15.36 % Energy : 520 Kcal

Bajra Gluten-Free Products

Gluten free diet is the only treatment for celiac disease which is an immune –mediated disorder, resulting from a permanent gluten intolerance, which primarily involves gastrointestinal tract.

Variety of gluten free products standardized from Pearl millet with combination of soya bean, rice, maize, amranthus grains and leaves, sesame seeds, etc.

( biscuit, mathi, upma, cutlet, noodle, pasta, porridge etc )

Products are nutritious and acceptable.

Easy to prepare

Gluten Free Bajra Biscuits

Gluten free Bajra Biscuits are safe for the consumption of celiac patient and can provide satiety to the deprived palate

Biscuits were liked moderately by the judges.

Are high in protein (16.32- 18.43 %), dietary fibre (1.76-2.95%) and calcium 120.5-129.71 mg) in comparison to gluten free biscuits available in market.

The biscuits prepared using pearl millet flour and soya flour with commercial sugar free sweetener was found to be acceptable by the public, entrepreneurs and stake’s holders.

The biscuits were very much appraised by the people in Awareness campaigns and entrepreneurs showed keen interest in adopting the technology.

The biscuits were high in protein (12.12-20.87%), fibre (2.24-5.12 %), significantly low in calorie content in comparison to basic recipe.

Convenience foods developed by using pearl millet not only provide convenience in cooking but are nutritionally superior foods at lower cost.

Can be stored well upto 3 months of storage with palatable range of fat acidity and peroxide value.

Pearl Millet value added products are nutritionally superior in comparison to their respective controls.

Not commercially available.

Prepared at reasonable cost.

Can be taken up for commercialization.

Skill development of Entrepreneurs & Scientists

Capacity building of Scientists

• Two days training on 28- 29, January, 2015 by COE in the Department. •

Fifteen

scientists of various Krishi Vigyan Kendras (KVK) ‘s.

• Scientists were trained on development of various new pearl millet products different than previous years including Bajra kulcha, Bajra chocolate , coconut and cherry biscuits, Marble cake, carrot cake, nutritious sev, ready to serve snacks etc was given.

• Educational posters and ingredients kits were also distributed for conducting training in their areas.

Trainings to rural masses

Eight

trainings in villages namely:

Lehrada (Sonipat), Nallod (Rohtak), Rewarikhera (Jhajjar), Sirdhaan (Fatehabad), Gurgaon Village (Gurgaon), Pali (Rewari), Gothra (Rewari), Roopana (Sirsa)

were organized during the month of October to March, 2015 for rural ladies.

• Value added products from pearl millet including sev, matar, cakes, ladoo were demonstrated. • Around

270 women

attended these trainings and appreciated the products prepared from pearl millet.

Trainings by KVK Scientists

Sixty five

trainings were conducted by KVK Scientists in their respective areas.

Products like Bajra laddoo, matar, sev and cake were demonstrated.

Approximately

2188

rural women participated.

Trainings to ICDS functionaries

Three

trainings (29 September, 2014; 18 December, 2014 and 24-25, February, 2015) were imparted.

ICDS functionaries. • Trainees were trained on preparation of value added products of pearl millet including products- ladoo, mater, sev and dhokla, baked products - cake and biscuit and extruded products.

• All the trainees appreciated the products prepared from Pearl millet

Training to Women Groups/ SHG’s/Entrepreneurs

Three

trainings of SHG/Women group from different villages of Haryana were organized on 14 Nov, 2014, 2 Jan and 18-19 February, 2015.

Ninety

women and men attended these trainings and appreciated the products prepared from Pearl millet. • The demonstration cum trainings were given for preparation of various Traditional products- Ladoo, Dhokla, Matar, Mathi and Sev, Baked products – cake (curd and eggless) and biscuits and extruded products- puff and kurkure. • Exposure to processing equipments:

Dehuller, Pulvarizer, Siever, Parboiling Unit, Solar Tunnel Dryer, Extruder for ready to eat food products, Noodle and Pasta making machines.

•Formation of SHG group, arrangement of finances for establishment of enterprise, and economics of enterprise etc.

Various SHG’S, ICDS Functionaries and Rural and Urban masses were given hands on experience on products development

Awareness campaigns

Four awareness campaigns were organized by Centre of Excellence and 8 awareness campaigns were organized by Scientists of KVK’s trained at COE to create awareness about nutritional importance and value addition of pearl millet.

To promote their consumption, among rural and urban masses, of nearby places.

National Workshop on Packaging of Fresh and processed Foods on 3 rd

by National Mission Food Processing under MOFPI at Hisar Krishi Shikhar Sammelan, Gurgaon on 13-15 March, 2015 Feb, 2015 organized

Four exhibitions by Scientist KVK’s.

All the technologies and educational posters were displayed and samples of technologies were kept for taste.

Stake Holders Meet

A Stake holder’s meet was organized on Technologies and food Products developed by CCSHAU, Hisar 20 March, 2015.

Fifty Four entrepreneurs and self -help group members participated in the event.

All stake holders appreciated the technologies displayed and some were keen to adopt the technologies.

Two manufacturers (Mr. Mahaveer from Aman Vishva Karma engineering works from Behbalpur and Mr. Sabun Chan Jain from hisar) were motivated to make one or two small scale processing equipments.

One technical person (Er. Vikram Panghal) was interested to run pilot plant unit in COE, Bajra.

Sh. Subhash was interested to establish processing centre in village Palwan if it can be established free of cost.

Out of the stake holders attended event two Stake holders (Ms Vishakha Dikshit from Bhiwani and Mrs. Sunita Gupta from SHG Hisar had given application for MOU.

Success stories

MOU have been signed By DKS Incorporate and CCSHAU, Hisar for Energy Bite Bajra Cookies, Bajre Puffs and Bajre Crunchy. There products are being marketed very well. They are getting tremendous response for bajra products everywhere.

DKS incorporate in their success story revealed that they prepared puffs and Energy Bite Bajra biscuits in different districts of Haryana.

Small Farmers Agribusiness consortium is promoting Bajra products developed by DKS incorporates in Delhi, National capital region at various locations.

Mr. Ved Pal of Kanwah village, Jhajjar is continuing sale of Bajra biscuits and Bajra ladoo.

Supplies same in various collages and offices in Jhajjar city. Displayed stall during Saras Mela in November and had a good sale there.

Ms. Manju of Badra village has sweet shop in village and selling Bajra ladoo and getting good response there.

Continuous efforts are being made to motivate people to set up entrepreneurial unit and for upscaling of value added pearl millet products

Posters and leaflets were prepared and used for publicity for utilization of pearl millet and its value added products.

Activity Plan for 2015-16

Approaching small, medium and large scale food industries/ chains covinced to adopt pearl millet products for sale ( Haldiram, Nathu sweets, PriyagoldGAIA cookies, Shakti Bhog cookies, Raja Biscuits) .

Efforts for commercialisation of Pearl Millet products through small entrepreneurs in rural areas.

Continuous organisation of awareness campaigns, to educate community regarding nutritional importance of these crops.

 Variety of new value added traditional, non-traditional, ready to eat convenience food will be developed from processed and unprocessed, pearled and un pearled pearl millet in combination with other food groups.

 Fine-tunement and upscaling of successful technologies.

 Already developed technologies will be refined to meet need of end users.

 Regular trainings will be organized for Scientists, Self Help Groups, ICDS Functionaries and entrepreneurs on processing and value added products of pearl millet.
