

Reheating Potentially Hazardous Food
Food reheated for immediate service:

Can be served at any temperature if it was
properly cooked and cooled
Potentially hazardous food reheated for
hot holding:

Must be reheated to an internal temperature of
165°F (74°C) for 15 seconds within 2 hours

Discard it if it has not reached this
temperature within 2 hours
