The Mondial Forni Mondial and Ecomondial steam tube fixed deck ovens, gas or gasoil heated, are composed of
independent decks with standard working height from 22cm to 17cm according to the model. The Mondial and
Ecomondial series are particularly suitable for medium / large size bread and any other products that require baking
from bottom to top and large steam production. You can load with trays, manual or mechanical setters, automatic
elevators, with a maximum baking temperature of 300°C. Mondial Forni have over 60 years experience ensuring top
performance and maximum reliability and safety.
Main manufacturing features:
Front - in stainless steel, it is made up of two columns, a hood, a loading end, a working table in the lower part of the
oven with one or two front doors (according to the model) to gain access to the burner and to the steam generators.
Structure - made up of stainless steel panels. The insulation comprising long fibre rock wool ensures minimum heat
loss. In the Mondial Series the side and top cement castings encompass all the tubes, making up a unit of exceptional
thermal inertia.
Baking deck – In electro welded aluminized sheet, ensuring a perfect seal to contain the steam inside, well lit up by
12V halogen lamps, they are encompassed by a thick insulation. Vents fitted at the back of the decks allow the steam
intake and discharge.
Deck floor – Each deck floor is made up of cement and granulated clay. The product can be baked directly on to the
decks or on trays. The high thermal inertia is very useful for large products: the bread having the same features as if
baked on the hearth.
Loading / Unloading end – Doors can be easily opened and cleaned. In addition they can be automatically opened or
closed when the setters push them during loading and unloading phases. The doors are made up of 10mm thick
tempered glass and are balanced by stainless steel lined counter-weights.
External and internal hood – Fully stainless steel, large size, equipped with a steam exhauster. The hood, besides
extracting the steam coming out from the loading end, is also trapping the steam of each baking deck through inside
tubes.
Steam tubes – Stainless steel tubes, cold-drawn with UNI663 certification and tested individually at 700 bar.
Steam generators – Large size for efficient steam production. Made up of very thick steel rectangular tubes, placed in
direct contact with the combustion smokes. Each deck is provided with an individual steam generator. Water supply to
the steam generators through bronze solenoid valves of maximum safety and durability.
Heating system – Furnaces is heated by gasoil or gas (methane or LPG) forced air burner. For the Mondial series
heating can also be provided by solid fuel (wood, olive residues etc.). A safety thermostat with manual resetting, with
bulb in the baking deck, prevents the oven to exceed 310-320°C in case of failure of the temperature main control
system.
Even bake – The large heating mass avoids sudden changes of temperature, ensuring an even bake. It is the ideal
oven for large size breads and for baking different types of products with thermal inertia. In addition, the use of cement
and refractory materials ensures constant and continuous steaming during the bake cycle. The result is top quality soft
and even bake.
The machine is built to comply with the accident prevention, hygiene and electric standards in force.
