SALAD (one serving)
• 2 cups raw spinach
• 3 oz. rotisserie
chicken
• ¼ cup canned
mandarin oranges
rinsed
• ¼ avocado
chopped
• 2 Tbsp sliced
almonds
• 1 chopped green
onion
Dressing
• 1 Tbsp. Dijon
Mustard
• 1 packet stevia
• 1/2 cup water
• 2 tsp minced garlic
• 1/4 cup red wine
vinegar
• 1 Tbsp sea salt
• 1 cup olive oil
• Fresh ground
pepper to taste
• Mix all ingredients
in a salad dressing
shaker or mason
jar.
