A brief history
Unfortunately, a great deal of damage was done
to the British cuisine during the two world wars.
Britain is on an island and supplies of many
goods became short. Ships importing food
stuffs had to travel in convoys and so they
could make fewer journeys. During the second
world war food rationing began in January,
1940 and was lifted gradually only after the war.
Beefsteak
The word “beefsteak” has several meanings:
A steak cut from beef cattle
Beefsteak plant
Beefsteak - tomato, a name given to a type of large, meaty
tomatoes.
Beefsteak fungus
Beefsteak mushroom, an alternate name for the false morel
Beefsteak (banquet), a celebratory dinner, generally held in
the New York City area.
Black pudding
Black pudding is a blend of
onions, pork fat, oatmeal,
flavourings and blood
(usually from a pig). As
long as animals have
been slaughtered to
provide food, blood
sausages like black
pudding have been in
existence.
Crown roast lamb
Ingredients










2 racks lamb, 6 to 8 ribs each
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon freshly ground black
pepper
6 cloves garlic, minced
4 teaspoons fresh thyme,
chopped
1 1/2 teaspoons ground coriander
1 1/2 tablespoons sherry vinegar
1/2 to 1 teaspoon Dijon mustard
1/2 to 1 teaspoon chopped fresh
rosemary leaves
Roast chicken
Roasting a chicken is
actually far easier than
the browned and
succulent results
would make it seem.
But when your guests
rave about the flavor
of the roast chicken,
you don't need to tell
them how easy it was.
Just say thanks and
smile.
Welsh Rabbit
Welsh Rarebit is also
known as Welsh Rabbit.
But I don’t want to call it
Welsh Rabbit because a
lot of people would say,
“Gross! Rabbit!” even
though there’s no rabbit
in Welsh Rabbit. I’m
positively certain Dick
van Dyke ate this
traditional English dish
of savory cheese sauce
served over toast.
To prepare Welsh Rabbit:
*slice bread into thin slices;
*put bread into the oven
and toast it;
*melt 1 – 2 tablespoons of
butter in a saucepan;
*add 1 – 2 tablespoons of
flour;
*pour 1/3 cup of milk;
*pour in ½ cup of beer;
*add spices (paprika and
dry mustard);
*whisk it all together until it is combined;
*grate and add some cheddar cheese;
*whisk it around until it is smooth;
*add egg yolk and whisk again;
*put a couple of toasts on a plate;
*pour the sauce over the toasts.

Irish stew
This traditional peasant
dish has evolved from a
basic lamb, potato, and
onion stew to more
elaborate versions
approaching gourmet
status.
Some versions may have
different meat substituted
for lamb or mutton. As
with any recipe, feel free
to modify it to meet the
needs and tastes of your
own family.
Mince pie
A mince pie is a small British sweet
pie traditionally served during the
Christmas season. Its ingredients
are traced to the 13th century,
when returning European
crusaders brought with them
Middle Eastern recipes.
The early mince pie was known by
several names. Typically its
ingredients were a mixture of
minced meat, fruit and spices
such as cinnamon, cloves and
nutmeg. The tradition of eating
Christmas pies in December
continued although its recipe had
become sweeter and its size
reduced markedly. Today the
mince pie remains a popular
seasonal treat enjoyed by many
across the United Kingdom.
