Wicked Chocolate
Sponge Pudding
Ingredients: 55g butter or margarine, 55g caster sugar, 55g
SR flour, 1 x 5ml spoon baking powder, 1 x 15ml spoon cocoa
powder, 1 large egg.
1. Grease 4 ramekin dishes.
2. Lightly flour the greased dishes.
3. Put the margarine and sugar in the food processor.
4. Cream together until light and fluffy.
5. Add the flour, cocoa and baking powder.
6. Use the pulse button to combine the ingredients without
over mixing.
7. Add the egg and pulse the mixture again until smooth.
8. Spoon the mixture into the prepared ramekins.
9. Loosely cover each ramekin with cling film. Make sure it
doesn’t touch the mixture.
10. Microwave on full power for 2 minutes.
11. To prepare the chocolate sauce, measure out 2 x 15ml
spoons of double cream, 2 x 15ml spoons of soft brown sugar,
2 x 15ml spoons unsalted butter, 1 x 15ml spoon cocoa.
12. Heat together in a saucepan, stirring occasionally. Simmer
gently for a few minutes.
13. Turn the pudding out onto a serving plate and spoon some
of the sauce over the top.
