Simple F&V Snacks for Preschoolers
This workshop will focus on child friendly fruit and vegetable snacks that will
increase young eater's capacity to try new fruits and vegetables. Resources for
finding recipes, as well as menu alterations will be discussed. Hands on
demonstrations of budget friendly snacks will highlight the nutrition benefits of
fruit and veggies that children will love. Recipe examples include:

Banana-Rama Breakfast

Simple Cereal Mixes
Molten Lava
Edamame Succotash
Fruit Salas w/ Pitas

Components
You do not always need a drink as a component – WATER is a Great Option!
USDA’s Proposed Rule
Fruit and Vegetable Split
2 of 5 components will be accepted instead of the
current 2 of 4 components
Therefore – you could serve a fruit and a vegetable at
a snack and will be reimbursable…..IF/WHEN Approved.

Granola, Graham Crackers, Fruited Muffins or Breads, Whole Wheat Scones, Rice or
Bread Puddings
Nut butters, Low Fat Cheese Sticks, Beans, Veggie loaded Chicken or Tuna Salads,
Hard Boiled Eggs
Condiments to jazz up offerings
Homemade dressings; condiments; dips
Flavored Dips with Cream Cheese* or Cottage Cheese (herbed, sweet or savory)
Applesauce as a dip
Pumpkin Pie Yogurt Dip

Edamame Succotash – Rainbow in my Tummy
Makes 3 cups Serving size (1/2 cup)
1 ½ cup shelled edamame (fresh or frozen)
1 ½ cups corn kernels (fresh or frozen)
2 tablespoons unsalted butter
1 teaspoon seasoning salt or salt and pepper to taste
1. Mix edamame beans and corn together in large bowl. Steam for 5 minutes
2. Remove from steamer and toss with butter and seasoning salt.
