Breakfast Muffins
Ingredients:
• 175g Self Raising Flour
• 50g Porridge Oats
• 140g Soft Brown Sugar
• 2 teaspoon ground cinnamon
• ½ teaspoon Bicarbonate of
Soda
• 1 teaspoon of vanilla extract
• 150ml Milk
• 6 tablespoon Oil
• 1 Egg
• 175g Sultanas
Equipment:
• Mixing Bowl
• Tablespoon
• Measuring Jug
• Fork
• Muffin Tin/Cases
Method:
1. Light oven 180°C
2. Prepare muffin tin with ten paper
cases
3. Put flour, oats, sugar, cinnamon and
bicarbonate of soda in a large bowl
4. Rub all ingredients through your
fingers as if making pastry
5. Beat the egg, then stir in the milk,
vanilla and oil
6. Lightly stir the egg mix into the
flour
7. Fold the sultanas into the mixture
8. Divide between the paper cases and
bake for 20 – 25 minutes
