PUMPKIN AND POTATO SOUP by

ecologically sensitive.
This is one of the most important goals of the EU: to live happily and take care of
environment.

Necessary ingredients:
4-5 medium-sized potatoes
20 dag of pumpkins chopped into cubes
1 small onion
2-3 spoons of fat
Potato, pumpkin (of any kind, depending on choice), onion, fat (oil, butter, olive oil), salt, pepper,
a little of tomato puree or tomato chopped into small pieces, leaves of parsley, celery leaf or basil
(depending on taste), vegetable broth or water.

Preparation:
Put some fat and chopped onion into a pot. When onion becomes golden, add potatoes chopped
into cubes, salt and pepper. Simmer a little, and after a few minutes add liquid so that potatoes
are covered. Let cook for 10 minutes.
After short cooking, add pumpkins chopped into cubes, add some more liquid and let it cook.
When cooked, chop with blender (you can leave some vegetables unchopped), add tomato and
chopped parsley, celery or basil and cook for a short time. While serving, we can add a spoon of
sour cream or yoghurt, slices of fried pancetta or cubes of fried bread.

Ingredients:
500 gr. flour
a pinch of salt
1 teaspoon vinegar
250 ml water
Filling:
1-1,5 kg swiss chard
5 spring onions
100 ml olive oil

• -Knead the dough ingredients to be soft
• -Divide the dough into 2 balls and spread them on the table into 2
oblongs (2-3 millimeters thin)

Put 1 part of a dough into an oblong pan, spread the filling and

Put the pan into a preheated oven at 200⁰ C and bake for 20

When baked, take it out and pour over olive oil and garlic and leave
it for 5 minutes to soak the mixture.

HONEY HEARTS by Zlatica Dinjar
• On the Christmas occasion, honey hearts were used to decorate the
Christmas tree as the familiy didn't have the money to buy all the
luxurious Christmas decorations.
The ribbon we used to put honey hearts on branches was the colour of
Croatian national flag: red-white-blue.
INGREDIENTS:
50 dkg flour
12 dkg sugar
10 g (1/2 tablespoon) salt
10 dkg fat (pork fat)
½ teaspoon baking powder
1 egg
1 egg yolk
2-3 tablespoon of honey
1 teaspoon ground lemon zest
1 teaspoon of cinnamon
1 teaspoon (2-3 ground) cloves

PREPARATION:
Melt honey and fat on low heat. Add all other ingredients. Shake out od floured
surface or bord and knead. Add more honey if needed. Roll, cut out a heart-shaped
mold. Bake at medium heat for about 15-20 min., 180oC
